Crockpot Meal: Chicken Tacos



I'm fairly new to the world of crockpot magic; I got my first one for Christmas just last year.  And while there are gozillions of crockpot recipes out there, in my mind, the really good ones make use of the "dump and cook" method.  The whole beauty of a crockpot is to make life ridiculously easy, am I right?  I've managed to collect a handful of keeper recipes, but this one is by far our favorite.  If we could rate this 187 Spoons we would.  But, I suppose a measely 5 Spoons will have to do :)

Yummm!



Crockpot Chicken Tacos
3-4 boneless, skinless chicken breasts
1 14oz can Hunt's fire roasted tomatoes, with juice
1/2 packet or 1-2 Tbsp. taco seasoning mix
low-sodium chicken broth to cover the chicken

Throw everything into your trusty crockpot.  Flip that baby to High and cook for 4 hours, or until chicken shreds easily with a fork.  Dinner done!


Our favorite add-ons:
Ortega Whole Grain taco shells
Lettuce
Black Beans (seasoned with cumin and onion salt)
Ranch
Salsa
Cheese
Avocado
Black Olives




Ingredient Lineup:

Dump everything in, and throw on the lid.  Cook on High for 3-5 hours.

After a few hours of crockpot magic,
the chicken is shreddy and ohhhh sooo flavorful.

I'm so not going to tell you how many of these we ate.

  1. Yummmmmmmm! I bet they'd be really good if you used fresh corn tortillas and just lightly fried/warmed them up (not so they're crispy, so they're soft corn tortillas). That way all the yummy crockpot juices could get soaked up by the 'tilla.

    I use my crockpot mostly for stews and soups, but this sounds like the perfect recipe to bring the crockpot into spring and summer!
