Pork Roast Soft Tacos

Monday's are the most hectic days of my week...it's grocery day. Since we have 4 kids that go with us shopping...it takes forever to get it all done...and we usually end up eating out that night since we are way to tired to even think of cooking. But I have made a commitment to eat at home every night this week...and so after work today I threw a pork loin roast into the crock pot and put that bad boy on high.

I went off shopping and came home to a wonderful dinner that I was able to throw together in about 15 minutes.

Can we say AWESOME?

Ingredients:

Pork Loin Roast
Garlic Salt
Onion Powder
Salt
Pepper
Corn tortillas

Mango & Avocado Salsa:

2 ripe mangos
2 ripe avocados
1/2 red onion
1/2 jalapeno with seeds removed
3 large tomatoes

Directions:

Place pork in crock pot...add salt, pepper, garlic salt and onion powder to taste. Add about a cup of water and cover. Cook on high for 4 to 5 hours - or on low for 6 to 7.

Warm tortillas in a damp kitchen towel in the microwave for about 1 minute.

Chop avocado, mango, onion and tomatoes and place in bowl. Finely chop jalapeno. Mix all ingredients...build yourself one yummy soft taco.

To chop avocado....take a knife and cut all the way down to seed in the middle. Spin knife around until skin is cut all the way around. Twist the 2 sides in opposite directions and pull apart. The easiest way to get the seed out is to take your knife and carefully slam it into the seed - tiny twist and it should pop right out.

To chop mango...the core of the mango is very large...slice off each side of the mango...score the flesh in a criss cross pattern and invert the skin...you should be left with cubes that are sticking up. Carefully slice them away from skin.

We give this recipe 4 spoons. I think that it would have gotten 5 if we had waited until a little later into summer when most of the ingredients are in season.
