Now that the weather is warming up it is time to fire up the grill. I tend to cook more in the summer because for some reason I find it easier to cook when it involves the grill. I know it is probably psychological, just being out of the kitchen makes it seem more fun.
Mmmmm.....this is a recipe that is both delicious and easy. (have you caught on yet that I'm all about the easy?) It is a definite keeper and will definitely be making a return visit to our plates this summer.
Hubs and I rate it a 5 spoons, the kids are less enthusiastic just because it contains sauce. You know, how dare we expect them to eat anything that is touching something else, much less something like sauce that is all over it? The nerve of us parents. Although, 2 of my kids DID eat it and didn't complain (much). Since they didn't want seconds....more for me!

Ingredients:
1 lb. boneless skinless chicken breast halves
1 medium green bell pepper, quartered
1 medium red bell pepper, quartered
1 medium onion, sliced
1 cup BBQ sauce
Flour tortillas
Directions:
Place chicken and vegetables on greased grill over medium-high heat.
Grill chicken 5-6 minutes on each side or until cooked through, brushing frequently with BBQ sauce
Grill veggies 4-5 minutes on each side, brushing frequently with BBQ sauce
Slice chicken and veggies into thin strips. Divide filling among tortillas and roll up. Serve with additional BBQ sauce if desired.
(Note: I sliced all my veggies up ahead of time and used a grill basket. I mixed them up frequently and brushed them with sauce)
Dinner in under 20 minutes? Fantastic! We are just learning how to use are grill basket so this we are definately going to try on the next Baseball Game night.
