This recipe comes from The Best Freezer Cookbook. It is great for those "soup" kind of days. Two of my kids aren't big on soup but I figured they could pick out the ingredients they like (the tortellini and chicken) and still walk away from the table fed. It is also a great way to use left over chicken you may have from another meal!
Ingredients:
3 cloves garlic, minced
8 oz. fresh or frozen cheese tortellini
2 cans chicken broth (10oz each)
1 cup frozen peas
1 cup diced cooked chicken
1/4 tsp. pepper
2 Tbsp. chopped green onions
1/4 cup freshly grated parmesan cheese (optional)
Directions:
1. In a large pot, bring 3 cups water and the garlic to a boil. Add the tortellini; return to a boil. Reduce heat to medium-high; cook stirring occasionally, for 10 minutes or according to the package instructions.
2. Add chicken broth and peas; return to a boil and cook for 2 minutes. Add chicken; cook for 1 minute. Stir in pepper and green onions.
3. Serve sprinkled with Parmesan cheese
