When the girls suggested we do a week of cookie posts I got a little nervous. I'm not much of a baker and opt for very simple recipes and shortcuts. (Yes, I buy the sugar cookie dough premade at the store. You know what? It tastes just as good as the ones I used to make with my mom and my kids still have fun baking them.)
The recipe I am sharing with you today is a very simple one. I admit it is more candy than cookie but I have taken it to many cookie exchanges and have received very favorable reactions. They are among my favorite things to make at the holidays because they are just so darn good! Be warned though, they are very sweet! (perfect for my super sweet tooth!)

Ingredients:
2 cups milk chocolate chips
2 cups butterscotch chips
1/4 cup peanut butter
4 cups unsalted dry roasted peanuts
Directions:
1. In a double boiler melt chocolate chips, butterscotch chips and peanut butter. Stir to blend well.
(I use a microwave. Work in 20-30 second intervals and mix well between each one)
2. Stir in peanuts and mix well.
4. Chill until firm. (approx. 20 minutes)
Yield: 4-5 dozen (depending on how big your spoonfuls are!)
You can store these in an air tight container in the fridge for a few weeks. I use wax paper to separate the layers.
Oh wow, those sound yummy! Have you ever swapped the butterscotch chips for white chocolate chips? My mind is spinning with the possibilites :) Thanks for sharing this with us!!
ReplyDeleteThese sound wonderful. Think I might make some with the kids this week. I'm with Sara think of all the combinations - of chips and nuts...I bet these would be fantastic with cashews!
