Strawberry Lime Granitas



Yum, yum, yum, yum, YUM!  This little recipe is just way too easy and delicious to skip!

It's a bit like an amazing strawberry-lime slushy popsicle you eat with a spoon.  And with only 3 ingredients, and no need for an ice cream maker, it's seriously your new favorite thing.  You can mix this up with other fruits (watermelon, anyone?!) and citrus; just follow the same basic steps.
You can also lower the amount of agave, depending on how sweet your fruit is to start with.  I used a bag of frozen and thawed strawberries (including that juice that melted off) because the fresh ones in my grocery store just weren't ripe or juicy looking.

Oh!  I just had an amazing ideaaaaa!  I've got a bag of frozen mango chunks in my freezer right now.  And more limes left.  Ohhhh... Guess who's making mango granitas this weekend?!  Who wants to come over and slurp them on the back patio with me?

Strawberry Lime Granitas
adapted from Oh She Glows

1 lb. (16 oz.) strawberries (I used frozen, thawed)
1/3 c. agave
1/4 c. lime juice (1 lime)
3/4 tsp. lime zest (1/2 lime)

Add all ingredients to a food processor and process until smooth. Pour into an 8" square pan and place in the freezer for 30 minutes. Scrape the mixture with a fork, then return to the freezer for another 30 minutes. Repeat three more times (for a total of 2 1/2 hours). Scrape, spoon into dishes, and eat! Makes about 3 cups.
