Cookie Dough Bites



And then, there were cookies for her.

That's right.  My turn!  Which means, some funky recipe that's swapped out sugar for something crazy.  You know me by now, yes?

Once again, Pinterest has delivered something fantastic and fun.  It's absolutely my new favorite recipe, and I've made it no fewer than four times over the past ten days.  Oh, yes, I have.  It honest-to-goodness tastes like cookie dough, and the texture is a bit chewy like a granola bar.  It takes 10 minutes to whip up, and doesn't require any oven time.  You may eat the entire batch while you're standing there at the counter.  Or maybe that's just me.



For the Paleo or non-oats people out there, you can swap out the oats for 1-2 Tablespoons of coconut flour.  I only tried it once, and it wasn't half bad.  If you're savvy with the gluten-free subs and find a better option, definitely share with the rest of us in the comments!   

Now, hop right into your kitchen to make these.  It'll take you longer to scroll through all my photos than it will to make a batch :)

Cookie Dough Bites
adapted from Averie Cooks

2/3 c. raw cashews
1/3 c. oats
dash salt
1-2 Tbsp. agave
1 Tbsp. real maple syrup
1 tsp. vanilla extract
2-4 Tbsp. chocolate chips

Pour the cashews, oats, and salt into a food processor and process for 15-30 seconds, until mixture looks like a meal or course flour. With processor running, pour in agave, maple syrup, and vanilla. Process for 15-60 seconds, or until mixture clumps or balls up. Pour mixture into a small bowl and fold in chocolate chips. Scoop with a mini cookie scoop into a container, and keep refrigerated. Makes about 12 cookie bites.

  1. Is it just me or is this not the first recipe you've posted for fake cookie dough (I remember one that was garbanzo bean based???). It's good to know that there are people out there like you making healthier cookie dough recipes.

    1. So not the first recipe, you are correct. But I actually like this one better! Tastes truer to real cookie dough and is easier to whip up. Plus you don't need something to dip in it.

    2. Either way, I can tell by your recipe choice that we share the same values, and that would be the love of cookie dough. Speaking of which, my (former) Boss in San Diego got a new yellow lab puppy and let her 4 year old son name it. The dogs new name? Cookie Dough.
