Tangy Cucumber and Avocado Salad



Oh, I'd forgotten how yummy this recipe is!  I went digging through my cooking notebook (which is just shy of completely falling apart), and rediscovered this recipe I had saved four years ago.  Whoops!  And now, I'm wondering what other amazing recipes are in there that I'd forgotten about?


This salad takes approximately three minutes to put together.  All you do is chop, stir, and toss it in the fridge.  It's got my favorite summertime flavors - cucumber, lime, and cilantro - mixed with creamy avocado, so there's no need for a dressing!  Chop, stir, and toss it in the fridge.  It doesn't get much simpler (or tastier) than this!

Tangy Cucumber and Avocado Salad
adapted from Allrecipes

1 medium cucumber, cubed
2 Tbsp. red onion, minced
2 Tbsp. fresh cilantro, minced
1 clove garlic
1 avocado, cubed
juice of 1 lime
juice of 1/2 lemon
salt & pepper to taste

In a medium bowl, stir together cucumber, onion, cilantro, and garlic. Add avocado and pour lime and lemon juice over. Season with salt and pepper, and gently toss to combine. Cover and refrigerate for at least 30 minutes before serving.
